Lazy Daisy Cake
topped with brown sugar and nuts

1 Tablespoon butter
1/2 cup milk

1 cup flour (sifted)
1 teaspoon baking powder
1/4 teaspoon salt

2 eggs
1 cup
sugar
1 teaspoon vanilla

1. In a small saucepan bring milk and butter to a boil. Set aside to cool a bit, while mixing the other ingredients.

2. In a large bowl, sift together flour, baking powder and salt.

3. In a separate bowl beat eggs until thick. Add sugar and vanilla.

4. Stir egg mixture into milk and butter mixture. Slowly add these liquid ingredients to the flour mixture - stirring as mixtures are combined. Beat well.

5. Pour batter into shortening greased 9" square cake pan.

6. Bake at 375° for 25-30 minutes.

Brown Sugar and Nut Topping

2 tablespoons butter (softened)
5 tablespoons brown sugar
2 tablespoons sour cream

1 cup flaked coconut
1 cup
chopped nuts (pecan or walnuts)

1. Cream together butter and brown sugar.

2. Stir in sour cream.

3. Mix in nuts and coconut. Spread over cake.

4. Brown Lazy Daisy Cake under broiler until topping is slightly toasted on top.
