Cinnamon Coffee Bars

 

1/4 cup shortening
1 cup brown sugar
1 egg

1/2 cup hot coffee

1 1/2 cup flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon

1/2 cup raisins

Preheat your oven to 350°.
Grease a 9 x 13 baking pan.

1. In a large bowl - cream shortening, brown sugar and egg.
2. Mix hot coffee into sugar mixture.

3. In a separate bowl - mix flour, baking powder, baking soda, salt and cinnamon.
4. Stir into creamed sugar mixture. Mix well.
5. Fold in raisins.

Pour coffee bar mixture into pan.
Bake at 350° for 18 - 20 minutes.

Cool, cut into bars and frost with vanilla frosting.

Vanilla Frosting:

1 cup powdered sugar
1/4 teaspoon salt
1/2 teaspoon Vanilla
2 tablespoons milk

1/4 cup chopped pecans for topping

Blend together powdered sugar and salt.
Add vanilla and milk. Mix well.
Spread the Vanilla Frosting on coffee bars.
Sprinkle with chopped pecans and serve!


Makes about 15 Cinnamon Coffee Bars.
